Is there a way to change the default image size?

Unfortunately, no, but here's a workaround. Create a new image that has all the specifications as you want them: page size, color, resolution, and so on. Call it something like "New Image" and put an alias or shortcut of it on your desktop. Then, whenever you need an image that size, open it. Just be sure to save it with a new name so the original stays clean.

It keeps a list of the last ten images you closed in Elements and reopens the one you select.

Why are there so many ways to open the File Browser?

I think it's just part of the Adobe philosophy. For anything you want to do in any of Adobe's programs, there are usually several ways to do it. Try them all once and settle on the one that's easiest for you.
