Always read the release notes for new OS X versions.
For every version of OS X, Apple releases a detailed list of changes to each of the frameworks. Often this provides useful new features that don't get much press coverage. For example, 10.6 introduced a much cleaner way of interacting with the clipboard. This can simplify your code, at the expense of supporting older versions of OS X.
